Where it starts
French wheat, distilled nine times, then filtered. It is made in Spirit Valley, south of the Cognac region, where the Atlantic keeps the climate mild and the ground is chalk and limestone. Nine passes is not a number for the label. It is what takes the grain down to the point where the only thing left is texture.

The wheat
One grain, chosen for purity
Fine French wheat, selected for how clean it runs rather than how much it yields. One grain, not a blend of whatever was cheap.
The wash
Before any of it is spirit
The grain is milled, mashed and fermented into a low-strength wash. Everything the still can do is decided here: a clean ferment is the only way to a clean spirit.
Nine times
Purity by repetition
Most vodka is distilled three or four times. Ours goes through nine, each pass stripping away a little more of what is not wanted and a little of what is.
The cut
What is kept, and what is not
Every pass is divided. The head runs hot and harsh, the tail runs heavy, and only the middle is kept. Nine times over, that is a great deal of spirit set aside.
Filtration
Then filtered again
Distillation decides the character. Filtration decides the finish. Both are done under a cellar master rather than to a schedule.

Cold, and neat
Out of the freezer and into a small glass. Nine distillations and a filtration are what make that a pleasure rather than a dare.
Temperature
Four to six degrees
Cold enough to thicken it slightly in the glass. That is the temperature the texture was built for, and it is why this one is worth drinking neat.
