Where it starts

Twenty five years in cask, blended in Scotland, named after the clippers that ran tea and mail across the oceans on speed alone. This is the one bottle in the range the house did not make, and it does not pretend otherwise. It was chosen.

What is in the bottle

Elegant and precise on the nose, then a run of delicate flavours and a mouthfeel that arrives before you have finished deciding what you are tasting. The finish is smooth and it is long. Twenty five years is what did that, and there is no shortcut to twenty five years. A limited edition, and when it is gone there is no second run of it.

Wheat and malt from a column still, blended with a non-peated malt distilled in copper pot. Scottish whisky, chosen and bottled under our own label.

Bourbon casks, a long time

A minimum of three years is the legal floor for Scotch. This one sat for twenty five, which is where the light gold comes from.

Tasting profile

Pear, apple, grapefruit

Bright with light gold hints, orchard fruit and citrus, and a balanced malted finish. Long drinks with soda or ginger beer suit it.

Serving

Neat, or a few drops of water

Neat first. Then a few drops of water if you want the nose to open, which at this age it will. Nothing else goes in.

Temperature

Cool room temperature

Sixteen to eighteen degrees. Cold shuts an old whisky down, and this one has spent twenty five years becoming something worth not shutting down.

Rarely, and for a reason

A twenty five year old blend is not a mixing whisky. If it goes into a glass with anything, make that anything water.
